A Quick & Simple Dinner

Being a student, I am fully aware of how difficult it can sometimes be to conjure up a decent tasting and nutritious meal while dealing with time constraints. I have managed to come up with one basic recipe that can handle a lot of different variations in order to keep things exciting, and anyone can make this simple, one pan dinner. Check it out!

One Pan Super Salad (This recipe feeds one person, but you can easily double or triple ingredients in order to feed a larger crowd)

Cooking Time: 20 minutes

You will need:

1 chicken breast OR 1 steak OR 1 piece of fish

1 baking potato (cooked) OR one bundle of rice noodles

1/2 cup frozen corn

1/2 frozen broccoli

1/4 sliced mushrooms

1 tbsp of salad dressing (choose your preference)

1 tbsp garlic seasoning

1 tbsp hot sauce (optional)

1/4 cup pureed tomato

1/2 cup water

2 cups spinach


In a medium sized skillet or shallow pot, bring water to a boil. Add meat, rice noodles/potato, corn, broccoli, mushrooms, garlic seasoning, tomato puree and hot sauce. Allow all ingredients to boil for 5-10 minutes (depending on meat) then let simmer for an additional 5 minutes.

Remove pan from heat and let cool for 5 minutes. In the meantime, toss spinach with salad dressing in a large bowl, then add all ingredients from the pan. Mix spinach and pan ingredients thoroughly, and enjoy!
