I am a breakfast food feign. I’ve said it before and I’ll say it again, louder, for the people in the back; breakfast foods can be enjoyed at any given point throughout the day, not strictly between the hours of 6 and 10am.
Breakfast foods are far too tasty to be limited to one meal a day. A lot of people pull their nose up at the idea of having breakfast for lunch, or dinner, but there are also plenty of people who are far more intelligent than the former and do enjoy breakfast foods for meals other than the first one of the day.
My husband and I love having breakfast for dinner, and he is as much of a feral raccoon for breakfast foods as I am. It was the main reason I married him.
Totally joking. But, we do enjoy breaky for dinner here and there, and because I love my own version of a breakfast bowl, I thought I would share my concoction with all of you.
For one person, or serving, you will need:
- One tbsp of minced garlic
- A solid helping of chopped onion, whichever kind you prefer
- Two eggs
- Either two pieces of cooked bacon, crumbled, or two pieces of cooked breakfast sausage, sliced
- Three large hashbrowns patties (I like doing mine in the air fryer)
- Cheddar cheese
- Salt and pepper
- Ketchup
Begin by cooking your onion and garlic in a frying pan with some cooking oil or spray on medium heat until they just start to turn brown. Once they’re looking on the brown side, add your eggs to the pan and cook them however you like (I love over easy with a runny yolk or poached).
While your eggs are cooking, add your meat of choice and your hashbrowns to a bowl. Try to break up the hashbrowns to the best of your ability until they’re in roughly bite-size pieces. Once your eggs are finished cooking, add them into the same bowl, along with your cheese, salt and pepper and ketchup, and mix everything together until you’re looking at a divine breakfast bowl.
