Make this for dinner tonight

Blaine and I are both under the weather right now. He has a head cold as well as a sore throat, and based on how seriously shitty I am feeling, I suspect I might have some variation of a flu bug, but I’m not certain.

Given how awful I’m feeling, cooking is not something I’ve really been enjoying as of late. I have next to no energy, so I’ve been trying to prepare some dishes that do not require a tremendous amount of work or preparation, and I thought I would share the following dish with all of you because it was a hit with Blaine. Try it out for dinner tonight, perhaps.

Lauren’s cheesy beef and rice skillet

You will need (to serve two people):

  • One tbsp of olive oil
  • 1/2 pound of ground beef
  • Salt
  • Pepper
  • Paprika
  • Steak spice seasoning
  • Paprika
  • Onion powder
  • Garlic powder
  • Taco seasoning
  • Two tsp of Worcestershire sauce
  • Two cups of rice, whatever variety you fancy
  • 1/2 cup of Cheese Whiz

First, you’re going to want to warm your olive oil in a pan on the stovetop over medium heat. Once that’s nice and toasty, go ahead and add your ground beef to the same pan, breaking it up into smaller crumbles.

While your beef is browning, add all of your spices and your Worcestershire sauce. I don’t use strict measurements when it comes to seasoning, so just eyeball it.

While your beef is simmering, cook your rice using whatever method you prefer, and once it has cooked, add it to the same pan your beef is in. Mix in your Cheese Whiz until it is melted and well blended, and voila! You’ve got yourself a tasty, simple, one-pan skillet meal to serve up and enjoy this evening.

Feel free to swap core ingredients in and out, for example, pasta instead of rice, or maybe pork instead of beef. It is a very versatile recipe and one that can pivot to suit any palate.
