Let’s make grilled cheese

When I tell you that I am a creature of habit when it comes to what I eat in a given day, I ain’t lying. Granted, I’m a creature of habit with just about anything in my life, and because I do love me a structured routine, what I eat for lunch and dinner doesn’t change too often.

To some people, that likely sounds appalling. To others, who, like me, hyper-fixate on specific meals until we can no longer look at them without being nauseated, you’re in the right place.

I eat eggs daily for lunch. Recently, however, I ran out of eggs and was left with a conflicting debacle. I settled on a sandwich, but then discovered I didn’t have anything in my fridge to compose a respectable sandwich aside from cheese. I then realized it had been literal years since I last enjoyed a classic grilled cheese, and in a moment of rare spontaneity, I decided to make one.

It was fucking delicious, and because it was so satisfying, I thought I would share my own personal recipe for making a grilled cheese with all of you to enjoy.

Lauren’s grilled cheese

You will need:

  • One tbsp of olive oil
  • One slice of any onion, chopped
  • One glove of garlic, minced
  • Salt
  • Pepper
  • Two slices of sourdough bread
  • Two slices of whatever cheese you prefer

Start by warming your olive oil in a pan over medium heat. Once the oil is warm, add in your onion, garlic, salt and pepper.

Cook the onion and garlic until it just begins browning and put the mixture on your bread slices. Next, add your cheese, and return your sandwich back to the same pan you used to sautee the onion and garlic.

Cook on medium heat with a lid overtop of the pan (this helps the cheese melt without burning the bread by cooking it for too long) until one side of your sandwich is brown; flip and repeat.

Voila! You’ve made yourself a wicked grilled cheese. Serve alongside any condiments you desire.
