Breakfast for dinner is something both Blaine and I appreciate and enjoy, and this past Sunday served as the perfect opportunity for us to do so. I went grocery shopping earlier in the day to grab a few items, and when I saw that hashbrowns were on sale, I deemed it appropriate to invest in some and make them for dinner.
Blaine is not a big bowl man when it comes to his food, whereas I love anything that can be made into a bowl version. His dinner was pretty traditional in the breakfast sense, but I decided to seize the opportunity and compose a rather delightful breakfast bowl for me to savour.
To make Lauren’s breakfast bowls, you will need (for one person)
- Roughly one cup of hashbrowns
- Two sausage rounds
- Half a tablespoon of olive oil, or cooking spray
- One tablespoon of minced shallot
- One clove of garlic, minced
- Salt and pepper
- Two eggs
- One tbsp of Boursin herb and garlic cheese
Begin by cooking your hashbrowns and sausage rounds however you prefer – I used my air fryer.
While your hasbrowns and sausage rounds are cooking, put your olive oil or cooking spray in a frying pan. Add your onion and garlic, salt and pepper, and cook until the onion and garlic just start to brown in colour.
Now add your eggs and cook them however you prefer – Blaine and I enjoy over-easy, but poached is another one of my favourites.
Once your eggs are cooked, as well as your hashbrowns and sausage rounds, place everything into a bowl and cut everything up into bite-sized pieces. Add your cheese and allow it to melt, then mix everything together and voila! You’ve got yourself a delicious breakfast bowl.
I am someone who cannot eat eggs without ketchup, and because ketchup and eggs are a controversial topic, you do you.
