Here’s how to make some easy Sausage and Rice Bowls

Weeknight dinners can be a struggle for a lot of people. Between work, kids, extracurriculars and more, finding the time to not only prep but furthermore prepare a well-rounded, fulfilling meal on a weeknight can seem almost impossible.

I don’t yet have children of my own, but with the farm and rugby, trying to find the time to make dinner during the week can get a wee bit squirrely. So, I’ve come up with a number of simple and quick meals to serve yourself and your loved ones any night of the week, and today, I thought I would share my Sausage and Rice Bowl recipe with all of you.

You will need (for two people):

  • Two to three smoked sausages, depending on your level of hunger, and whatever flavour you prefer
  • Two servings of rice (again, whatever kind you prefer)
  • Two tbsp of hot sauce
  • 1/2 cup of shredded cheese (whatever your preference is)
  • Salt and pepper
  • Chopped green onions

Begin by preparing your smoked sausage. I use my air fryer to cook mine, and I cook them at 400F for seven minutes. Make sure you poke a few holes in them prior to cooking them.

While your sausages are cooking, prepare your rice. I cook our rice in the microwave (don’t judge me), but feel free to cook it however you see fit.

Your rice and sausage should end up finishing at roughly the same time. Once both are cooked through, chop up the sausages into bite-sized pieces and evenly distribute them between the two servings of rice. Next, drizzle both servings with hot sauce and the shredded cheese, split equally between the servings, and then top with the chopped green onion.

Serve this alongside a nice salad or some chopped veggies, and you’re looking at a balanced, delicious and damn quick dinner.
