When I saw the title of the recipe I will be sharing with all of you today, my mouth quite literally began watering a little bit. I can’t say that this is something that happens often, because it isn’t, so when this occurred, I knew I had to share this recipe with all of you because it sounds so damn delicious.

“Ingredients
- 1/4 cup granulated sugar
- 2 teaspoons cinnamon
- 4 overly ripe bananas, mashed (about 1 1/4 cup mashed)
- 1/4 cup melted salted butter or coconut oil
- 1/4 cup pure maple syrup
- 2 eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
“Cinnamon Crunch
- 2 tablespoons salted butter, melted
- 3/4 cup dark brown sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon cinnamon
“Instructions
“1. Preheat the oven to 350° F. Butter a (9×5 inch) bread pan.2. Combine the sugar and cinnamon.3. In a bowl, stir together the mashed bananas, melted butter, maple syrup, eggs, and vanilla until combined. Add the flour, baking soda, and salt, and mix until just combined.
“2. To make the crunch. Mix the butter, brown sugar, flour, and cinnamon.
“3. Spoon half the batter into the prepared bread pan. Sprinkle with the cinnamon sugar and 1/4 cup of the crunch mix, reserve the remaining crunch mix for topping. Evenly spoon the remaining batter over the sugar. Sprinkle over the remaining crunch mixture.
“4. Bake for 50-60 minutes or until the center is just set. Remove and let cool for 30 minutes before cutting…or eat it warm with a smear of cinnamon butter. Enjoy!” the recipe states.
I realize this recipe is arguably considered to be a dessert, but, personally, I see no issue whatsoever with enjoying a slab of this magnificent creation for breakfast, lunch or dinner.
