Cake mix … cookies?

When I sat down to write today’s post and was met with nothing more than my blinking cursor on a blank screen as a form of inspiration, I turned to Blaine, my husband, and requested some help with selecting a topic. He panicked a wee bit, so I asked him to fire off a random recipe that I could use as a starting point. He suggested cookies, and when I pushed him for a specific kind, he truly blanked. So, I turned to my good friend Google and searched for unique cookie recipes.

I was not disappointed.

I’m a little ashamed that this idea never crossed my mind, but when I came across a recipe that uses cake mix as a base for cookies, I knew I had found a winner. Check out the following recipe from delish.com for Cake Mix Cookies, which I have deemed sharing an absolute must.

“Ingredients

  • 3/4 cup sprinkles
  • 1 (15.25-oz.) box classic yellow cake mix
  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil, plus more for greasing

“Directions

Step 1

“Preheat oven to 350°. In a large bowl, whisk cake mix to aerate and remove any clumps. In a medium bowl, whisk eggs and oil until smooth. Using a spatula, gently fold egg mixture into cake mix until a dough forms and no dry streaks remain.

Step 2

“Place sprinkles on a plate. Grease a medium ice cream scoop with oil. Using prepared scoop, scoop out dough and roll in sprinkles until exterior is coated. Arrange between 2 parchment-lined baking sheets, spacing about 2” apart.

Step 3

“Bake cookies until slightly firm, 10 to 12 minutes. Let cool,” the recipe states.

I love cookies, and I enjoy cake, so I see no issue as to why these two excellent desserts can’t be combined to create a beautiful cake cookie hybrid.
