Simple and Fresh Noodle Bowl Recipe

I am the type of person who consistently eats something I enjoy until I essentially become sick of it (weird, I know). As of late I have been enjoying my own noodle bowl concotion, therefore I thought I would share my recipe with others in hopes of it appealing to other foodies.

You will need:

  • 1 serving of rice noodles
  • 1 serving of black bean ‘meatballs’ (I get mine from Sobey’s)
  • Two hearty handfuls of bean sprouts
  • A handful of green onion
  • 2 tbsp red pepper hummus
  • 1/4 of an avocado
  • Sriracha
  • Salt and pepper

Place the rice noodles in a saucepan with enough water to just cover the top of the noodles. Allow to cook on medium heat, stirring to prevent the noodles from sticking to the bottom of the pan. When the noodles become separated from one another, add the black bean ‘meatballs’ and the bean sprouts. Wait for the water in the pan to be absorbed by the sprouts, then remove from heat and place in a bowl.

Toss the noodle mixture with the green onion, red pepper hummus, sriracha, and salt and pepper if desired. Taking your avocado, dice into chunks and add to the noodle mixture. Stir, taste to see if any other spices are needed (or more sriracha), and enjoy!

This recipe takes approximately 15 to 20 minutes to make, and it can be made in advance and stored in the fridge for extra meals at a later date. Feel free to substitute the rice noodles for other noodles, or even with plain rice, and further feel free to substitute the black bean ‘meatballs’ for any other type of protein, for example, chicken, pork, beef or seafood. Other vegetables can also easily be added to this creation.
