Love Fritos? Make this recipe tonight

I’m not a huge potato chip eater. My mom never really bought chips nor kept them in the house when my sister and I were growing up, much to my dad’s dismay, and I think an absence of them has allowed me to carry on through life without giving much thought to them.

I like chips, don’t get me wrong, and if I had to select one in particular, I would have to go with Fritos. I don’t know what the fuck it is about these chips that make them so damn addicting, but I could polish a family-sized bag off in one sitting, no questions asked.

Considering how much I enjoy Fritos, when I saw a recipe for Frito Pie, my curiosity got the best of me and I had to check it out. I was pleasantly surprised to discover it actually sounds delicious, and I wanted to share it with you – this recipe comes from tasteofhome.com.

“Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
  • 1 package (9-1/4 ounces) Frito corn chips
  • 2 cans (10 ounces each) enchilada sauce
  • 2 cups shredded cheddar cheese
  • Thinly sliced green onions, optional

“Directions

  1. Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, crumbling meat; drain. Stir in beans; heat through.
  2. Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13×9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips.
  3. Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions,” the recipe states.

The origins of the Frito Pie, apparently, stem from New Mexico, but regardless of where you’re located, consider giving this dish a try for dinner tonight.
