Craving breakfast food? How about some pancake tacos with eggs and bacon?

The inspiration behind today’s post stems from me writing this as I cook dinner for myself and my husband. We are having breakfast for dinner, something we both tremendously enjoy, as do many people; I really do not understand why we associate such delicious foods with strictly breakfast when they can easily be enjoyed at any given point throughout the day.

I wanted to find some funky breakfast recipes to share with you, and the following from frontrangefed.com for Pancake Tacos with Eggs and Bacon certainly meets the criteria. Check it out.

“INGREDIENTS  

  • 16 pancakes
  • 1 lb bacon
  • 12 large eggs
  • 8 tablespoon maple syrup

“INSTRUCTIONS 

  • “Make the bacon. I like to make my bacon in the oven, as it’s easy to clean up when you’re done, and you can cook it while you cook the eggs and pancakes. (And the bacon comes out perfectly every time!) But, you can make the bacon on the stovetop or even in the microwave if that’s easier for you.
  • “Make the pancakes. Try to make these thin enough and big enough that they are easily able to fold into a taco and hold the filling. Set aside and keep warm.
  • “Make the scrambled eggs. Everyone likes their eggs a bit differently, but I prefer mine soft and creamy. (Learn how to make perfectly cream scrambled eggs here.)
  • “Assemble your tacos. Once everything is cooked, stuff each taco with a spoonful of scrambled eggs, and slices of bacon. Drizzle a ½ tablespoon of maple syrup over the top and serve,” the recipe explains.

This recipe is a bit vague because it assumes the cook is familiar with how to cook certain foods, for example, bacon, pancakes and eggs, but if you’re unsure about any of these and how to go about making them, feel free to reference Google.

I don’t know about you, but I think breakfast tacos sound pretty darn great to me.
