This could just be my own personal observation, but does anyone else feel as though finding a new and creative recipe on the internet nowadays is rather challenging? There are millions of recipes available, yes, but so many of them are redundant and boring, and, personally, I like a little bit of creativity when it comes to cooking. As an example, I find casserole recipes are a bit overdone, but this could also stem from my general dislike of casseroles, to be fair.
I acknowledge I can’t complain about the matter too much because I have not personally contributed to an uptick of fun and new recipes. My background is English, not cooking.
I tried Googling “creative recipes” and did come across a few that snagged my attention. I settled on a recipe for a “Chicken & Cheese Tortilla Pie” from tasteofhome.com to share with all of you because it is not something I have seen before. It doesn’t require too many ingredients, and it is relatively straightforward:
“Ingredients:
- 1 can (10 ounces) green enchilada sauce
- 8 corn tortillas (6 inches)
- 2 cups shredded cheddar cheese
- 1/4 cup sliced ripe olives
- Salsa, optional
“Directions:
- Preheat oven to 375°. In a small skillet, warm enchilada sauce over medium heat. Dip four tortillas, one at a time, in sauce to coat both sides; arrange on bottom of a greased 9-in. pie plate, overlapping to fit.
- Layer with 1 cup chicken, 1 cup cheese and 2 tablespoons olives. Repeat tortilla and chicken layers. Pour remaining enchilada sauce over top. Sprinkle with the remaining cheese and olives.
- Bake 10-15 minutes or until heated through and cheese is melted. If desired, serve with salsa,” the recipe states.
I’m not entirely sure what purpose the olives serve, so, personally, I would omit them and instead use some chopped green onions or some cilantro.
