Let’s make an Amish Breakfast Casserole

I was inspired to share a recipe with all of you for today’s post, with the inspiration stemming from a complete and utter lack of functioning brainwaves on my behalf. I think I’m having a Lyme flare-up with the shit weather we have been having here in Southern Ontario (cool and rainy), and despite my best efforts to brainstorm a riveting topic for today’s post, my brain simply said ‘nope.’

So, I settled for a recipe post, and I do hope that is alright with you, my readers.

I like finding fun and creative breakfast recipes to share because a lot of foods associated with the first meal of the day can get to be a bit redundant. I came across a recipe from tasteofhome.com for an Amish Breakfast Casserole, and because it has such fantastic reviews, I figured it was a safe bet. Check it out.

“Ingredients

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1-1/2 cups 4% cottage cheese
  • 1-1/4 cups shredded Swiss cheese

“Directions

“Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

“Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13×9-in. baking dish,” the recipe explains.

I can’t say I’ve had too many breakfast casseroles in my day, and while a lot of people pull their nose up at the idea of a casserole, this one sounds pretty damn delicious. I found the incorporation of cottage cheese to be a little out of left field, but perhaps it is what makes this casserole so tasty.
