Cottage cheese … ice cream?!

It seems as though just about each and every time I open up Instagram on my phone, I find myself watching a Reel explaining how to make a relatively common food from very uncommon ingredients. Sometimes I can’t help but wonder if some foods should simply be left alone in their harmless existence, and how we really don’t need to revamp and remake everything. On the other hand, however, I have seen a few of these videos that end up turning out spectacularly, and a recent Reel I watched from @that40yearguy serves as a fine example of these exceptions.

The man in this video is referencing a different video for the recipe in question, and the idea is to make a version of mint chocolate chip ice cream using cottage cheese. When I initially started watching the video and heard this ingredient substitution, I was appalled. The thought of cottage cheese standing in for ice cream seems diabolical, and while the other required ingredients are more normal (for example, raw honey, spirulina for colour, peppermint extract and dark chocolate), I could not get past the idea of cottage cheese replacing ice cream.

I forced myself to continue watching out of sheer curiosity, and, essentially, you blend all of the ingredients, minus the dark chocolate, together, put the mixture in a small glass dish, freeze it for a few hours, then serve it with grated dark chocolate or dark chocolate chips. The man in the Reel does this and then tastes his creation, and his shock at how closely it resembled mint chocolate chip ice cream blew my damn mind. His, too, based on his reaction.
