How about some Jalapeno Popper Corn Salad for your next potluck?

Salads have earned themselves a somewhat shitty reputation in the culinary world, and the general lack of appreciation towards them angers me a wee bit, as preposterous as that sounds. I think most people, when they hear the word ‘salad,’ automatically think of lettuce and some shit dressing. If that is the sort of salad we are talking about, I will kindly pass, thank you very much. But, salads do not have to consist strictly of greens, and I think the creative potential of salads is sadly extremely limited because so many people deem them rabbit food.

If I’m having a salad, I like to make an entire meal of it, meaning I’m incorporating all major food groups into said salad. Salads are a great option to bring to a potluck or a gathering of any sort, and when I came across a recipe for Jalapeno Popper Corn Salad from tasteofhome.com, I absolutely had to share.

“Ingredients

  • 1 medium onion, quartered
  • 2 jalapeno peppers
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 ounces cream cheese, softened
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups fresh corn (about 8 ears), cooked and cooled
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1/2 cup crumbled cooked bacon, divided

“Directions

“Grill onion and jalapenos, covered, over medium-high heat or broil 4 in. from heat 3-5 minutes on each side or until lightly charred. Cool completely; chop into 1/2-inch pieces.

“Combine the next 9 ingredients. Stir in corn, cheeses, half the bacon, and the grilled vegetables. Top with remaining bacon to serve,” the recipe explains.

This is the sort of salad I’m referring to when I say they really can be positively delicious. I don’t think anyone will be upset if you show up with this beast of a dish.
