The other evening I was experimenting with some of the items in my fridge, and in doing so I was able to create my own version of a taco recipe that actually produces a rather tasty creation. I thought I would share this recipe with others in hopes of encouraging folks to acknowledge being gluten, dairy, and egg free doesn’t have to be terrible.
You will need (for one serving):
- 4 mini corn tortillas
- 1/4 of an avocado
- 2 tbsp of red pepper hummus
- Salt and pepper
- A protein of your choice (I used sausage)
Begin by placing your protein of choosing in or on the stove to cook. Depending on the type of protein you’re using, plan for adequate cooking time. This recipe can be made vegetarian just as easily as it can be made with a meat; for example, one could use chicken, ground beef, or sausage, as I did, eggs, fish, soy-based protein or beans.
Take your tortillas and microwave them for thirty seconds or so to soften them. Once they are warm, slice your avocado into cubes and disperse equally amongst the tortillas. Place a hefty spoonful of the red pepper hummus on each tortilla as well, and top with spinach, sriracha, and salt and pepper. Add your protein, if you’re using one, roll up, and enjoy!
This recipe is evidently easily adaptable and can use more or fewer ingredients, depending on your personal preferences. For example, feel free to make use of more veggies, perhaps some sauteed onions and peppers, and opt out hummus for baba ganoush. If you’re not intolerant to gluten, feel free to use regular tortillas, or perhaps even pita bread instead. As I said, I sort of threw this recipe together using the items I already had in my fridge, but I will likely be making it again soon because it is so versatile.
