Yesterday evening I concocted a rather tasty creation for dinner, and I thought I would share this concoction with my readers in case anyone is interested in creating an easy, fresh meal. It is nutritious, simple, and can further be made in advance and enjoyed the day after if you’re looking to save time.
You will need:
- 1/2 basmati rice
- 2 pieces of fish, either salmon, cod or tilapia
- 2 tbsp guacamole or 1/4 of an avocado
- 2 tbsp red pepper hummus
- 4 stalks of asparagus
Begin by submerging rice in water in a pot and heat on high on the stove, stirring often. Once rice is cooked, place your fish of choice in the pot with the rice and allow to cook through, for approximately 10 minutes. Once fish is almost cooked, add asparagus to the same pot and allow to soften. Once the rice, fish, and asparagus are cooked through, remove from pot and place on a plate. Mix in avocado/guacamole, red pepper hummus, and sriracha, if desired, and enjoy!
As I said, this recipe can be doubled if you wish to meal prep and eat it throughout the week, and the ingredients can be swapped for others quite easily. If you’re vegetarian, swap the fish for a meat-free protein; if you prefer traditional hummus over red pepper hummus, the flavor will still be delicious; if you’re not a fan of asparagus, feel free to incorporate any vegetable of your preference. The rice can also be replaced with pasta, and any type of pasta for that matter, some examples being tofu-based, corn-based, or gluten-free.
This recipe does not require any sort of particular culinary skills, and I have faith that if I am able to make it taste good, a majority of other individuals will be able to as well. If you make it, let me know your thoughts!
