Here’s your next weeknight dinner

When it came time to start preparing dinner a few nights ago, I found myself looking at two raw, skinless chicken breasts, wondering what in the fuck I was going to do with them in terms of how to serve them. Eventually, I just started grabbing random shit from my fridge and cupboards and in doing so was able to create a rather simple, delicious, and quick dinner that would be ideal for a family on a weeknight. I figured it might be nice to share my concoction with all of you.

If you’re cooking for two, you will need:

  • Two large skinless chicken breasts, diced
  • One tbsp of olive oil
  • Salt and pepper
  • One tbsp of garlic powder
  • One tbsp of onion powder
  • 1 tbsp of Diana sauce
  • One bag of penne pasta
  • 1/4 cup of shredded parmesan cheese
  • 1/2 cup of Cheese Whiz
  • Two tbsp of minced garlic
  • A dash of cream or milk

Start out by filling a pot with water and add a generous pour of salt to your water. Bring it to a boil, and while that’s underway, throw your diced chicken in a bowl and coat it with olive oil, salt, pepper, onion and garlic powder, and Diana sauce. Once your chicken is cooked through, set aside, and by now, your water for the pasta should be at a boil. Add your noodles of choice (I used penne) and cook them until they’re al dente. Once finished cooking, drain your noodles leaving behind a small amount of pasta water, and return to your pot. Add your chicken, along with your parmesan, Cheese Whiz, garlic, milk or cream and some more salt and pepper to taste. Cook on low until the cheese is melted, and voila! You have yourself a hearty, delicious, simple and quick weeknight dinner for your family.
