In a pinch for dinner? Make some foil packets

When I was about 12, I entered my culinary era in life; I was captivated by food and cooking and was absolutely certain that I wanted to be a chef.

Obviously, plans changed, but I am quite grateful that food became such an avid interest of mine at a young age. It proved to be beneficial in a variety of ways, granted, and I can also thank my dad for potentially being the reason behind this interest – he has always loved and enjoyed cooking, and a lot of my fondest childhood memories involve our family enjoying one of his creations. My mom is also a great cook, and my sister cooks for a living, so food is definitely a topic of interest amongst us.

When I was obsessed with learning about all things food-related, I recall coming across a recipe in a Food magazine publication of some sort for a Southwest chicken and potato foil packet dinner. I was absolutely enthralled by the creation because I had never heard of foil packets as a cooking method before, and upon making the dish without any complications and savouring its fantastic flavour, I started making foil packet dinners for our family quite a bit.

A foil packet dish typically consists of a protein and a carbohydrate – oftentimes involving potatoes and chicken, but you can get very creative with them. You essentially put your ingredients inside aluminum foil, create a tent shape around it with an opening to allow steam to escape, and cook everything together in the oven in no time. Everything inside the packet turns out juicy, flavourful and truly delicious, and like I said, the sky is the limit in terms of ingredients, flavour combinations, etc.
