How about some Dumpling Soup for dinner tonight?

I have yet to meet a dumpling I don’t like. I must inherit my appreciation for Asian cuisine from my dad, because he, too, is a dumpling feign; he and I are the only ones in our family who enjoy sushi, so every now and then we have a little dinner date together.

It isn’t too often your eyes see something called dumpling soup, so when I spotted a recipe to make some from loveandlemons.com, I knew I had to share. Check it out.

“Ladle into bowls and garnish with the remaining scallions and sesame seeds. Serve with more tamari and chili crisp, if desired.

“Heat the oil in a large pot over medium heat. Add the mushrooms and cook, stirring occasionally, for 5 to 8 minutes, or until softened. Add the tamari, broth, garlic, ginger, carrot, dumplings, and half the scallions and stir. Bring to a boil, then reduce the heat and simmer for 4 minutes, or until the dumplings are heated through.

“Remove from the heat and add the spinach, rice vinegar, and lime juice. Stir until the spinach wilts. Season to taste,” the web page explains.

Personally, I’ve had great luck with a few different dumpling varieties from my local Costco, and most grocery stores carry them in the freezer section if you’re unsure where to secure some of these delightful creations.
