As bizarre as the title of today’s post is, I implore you to hear me out and stick around for some context. I was researching some creative dessert recipes to share with all of you, and when I came across a recipe for a Fruit Pizza from ourbestbites.com, I was more than curious, to say the least.
Going by the photo, this creation is essentially a pie of sorts with a lovely fruit topping. I realize the idea of pizza and fruit combined isn’t exactly the most appetizing thing to visualize, so I figure providing you with some visuals might assist in clearing up any apprehension.
So, if you’re feeling brave, check out the following recipe for a fruit pizza.
“Ingredients
“Crust
- 1 cup real butter 2 sticks, or 8 oz
- 1 cup white sugar
- 1 egg large or extra large
- 1 teaspoon almond extract
- 3 cups all-purpose flour 390g
- 1 ½ teaspoons baking powder
- ½ teaspoon table salt
- Zest of 1 orange
“Creamy Topping
- 8 ounces package cream cheese
- ¼ cup brown sugar
- ½ teaspoon orange extract
- 1 cup whipping cream
- ½ cup powdered sugar
“Fruit Topping
- ½ cup dark or semi-sweet chocolate chips optional
- 1 pint strawberries washed, hulled, sliced, and patted dry
- 1 pint blueberries washed and patted dry
“Instructions
- For the crust, cream the butter and sugar until light and fluffy–about 2 minutes. Add in egg and extract and mix to incorporate.
- In a separate bowl combine flour, baking powder and salt.
- Slowly add the flour mixture to the butter mixture and mix until completely combined. Add the orange zest and mix until combined.
- Form dough into a ball and flatten out into a circle on a piece of parchment the size of a half sheet baking pan. Use a rolling pin, and your hands, to press out into a circle shape about ⅓ inch thick. If desired, you can add a decorative finish (like fluting) to the edges of the crust. Lift dough and place parchment on a baking sheet. Cover with plastic wrap and refrigerate for at least an hour.
- When ready to bake the crust, preheat your oven to 350℉. Bake the crust for 18-25 minutes or until just golden brown around the edges and set in the center, but still soft. If you prefer a crisper crust, you can bake the crust for a longer amount of time. Allow to cool completely.
- When the crust is cool, use an electric mixer to combine the cream cheese, orange extract, and brown sugar until light and fluffy. In a separate bowl, whip the cream and powdered sugar until medium-stiff peaks form. Fold the whipped cream into the cream cheese mixture and combine well.
- Spread the cream cheese mixture over the cooled crust. You will likely have a little extra topping, use it to dip fruit or graham crackers! Arrange the fruit as desired over the creamy topping.
- If using chocolate, place the chocolate chips in a heavy-duty small Ziploc bag and heat in the microwave for 20 seconds at a time, mashing the bag around until the chocolate is completely melted and smooth. Cut a small corner off the bag and drizzle the chocolate over the pizza. Refrigerate until ready to serve,” the recipe states.
Overall, I think this would serve as a fantastic dessert option for any summer get-together.
