Here’s how to make some cinnamon coffee muffins

I try my best to limit myself and my tastebuds when I go grocery shopping. I really do. I make a list beforehand, try my best to avoid going on an empty stomach, and try to find the best deals and prices possible to save some coin.

I still, however, buy myself some treats from time to time, and you can bet that when I spotted cinnamon coffee muffins as I was perusing the aisles, I snatched them up quicker than a dog does when eating something they arguably shouldn’t. Bite force stronger than a damn hippo when that shit happens.

Anyways, these muffins are quite delicious, so I thought I should look into making the homemade version. This recipe comes from 100krecipes.com.

“Ingredients

For the muffin

  • 1 ½ cup all-purpose flour
  • ½ cup light brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • 1/3 cup canola oil
  • 2 large eggs

For the crumble topping

  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • 1 ½ cups all-purpose flour

For the glaze

  • ¼ cup confectioner’s sugar
  • ½ tsp vanilla extract
  • 1 tsp milk

Instructions

  • Preheat the oven to 375 degrees and line a 12-cup muffin tin with paper liners. Set aside
  • Begin making the crumble topping by combining sugars, cinnamon, and salt together in a medium bowl. Whisk in melted butter.
  • Stir in flour using a spatula until combined
  • Spread crumble mixture out onto a parchment paper-lined baking sheet to dry for 10-15 minutes
  • Whisk together flour, sugar, baking powder, cinnamon, baking soda, and salt together in a large bowl until combined
  • In a separate bowl, whisk together milk, eggs, and canola oil until combined
  • Pour milk mixture over dry mixture and mix with a spatula until combined
  • Spoon batter into the prepared muffin pan, filling each one ¾ of the way full
  • Sprinkle crumble topping over top and gently press mixture into the batter
  • Bake in preheated oven for 15-17 minutes
  • Remove muffins from the oven and allow them to cool on a wire rack while you prepare the glaze. Mix together glaze ingredients until smooth, and drizzle over muffins,” the recipe states.
